Brown Sugar Chocolate Chip Banana Muffins

We are BIG banana muffin fans in our house. Specifically with chocolate chips. This recipe is such a keeper! I gifted some to a friend who has a newborn at home, and my family gobbled up the rest in less than a day! That means we are making it again ASAP.

This recipe will make 18 regular size-muffins.

Brown Sugar Chocolate Chip Muffins

  • 2 large over-ripe bananas, mashed

  • 3/4 cup dark brown sugar

  • 2 eggs

  • 1/2 cup unsalted butter, melted and slightly cooled

  • 2 teaspoons pure vanilla extract

  • 1 3/4 cup all-purpose flour

  • 1 1/2 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon salt

  • 1 1/2 cup milk chocolate chips

Directions:

  1. Preheat oven to 350 degrees.

  2. In a large bowl, mash the ripe banana until very small chunks remain. Add in the brown sugar and eggs and mix with a wooden spoon. Add in the melted butter (slightly cooled, so doesn’t cook the eggs!) and the vanilla extract and mix.

  3. Add in the flour, baking powder, baking soda, ground cinnamon and salt and mix until just combined.

  4. Fold in the chocolate chips.

  5. Use an ice cream scoop to scoop batter into muffin tins lined with liners or sprayed with non-stick spray.

  6. Bake for about 19-20 minutes, or until golden brown and baked in the middle.
