Thick + Soft Peanut Butter Cookies

I always know it’s been a busy season when I look back and I haven’t blogged much! Ever since having children, I’ve spent more time playing and outside than in the kitchen. But, that doesn’t stop me from writing on this space and baking from time to time, because over the past 12 years it’s my escape to all things happy and good. Case in point: you will never see an unhappy person at a bakery, right? Everyone is always smiling. Because baking just gives you all those warm feelings inside. So here we are with another cookie recipe for you!!

I needed a cookie for a party we had last weekend, and a soft peanut butter cookie seemed like a good pick! These are thick and soft and just make you smile. I am a sucker for peanut butter cookies with the fork marks on the top. Does it get any better? Sure doesn’t.

Thick + Soft Peanut Butter Cookies

  • 1 cup (2 sticks) butter, unsalted and softened

  • 1 cup creamy peanut butter (I used a natural creamy PB with no added salt)

  • 1 1/4 cups dark brown sugar

  • 3/4 cup white sugar

  • 2 large eggs

  • 2 teaspoons pure vanilla extract

  • 2 Tablespoons milk

  • 3 1/2 cups all purpose flour

  • 2 teaspoons baking soda

  • 1 teaspoon salt (cut this amount in half if your peanut butter is salted)

Instructions:

  1. Preheat oven to 375 degrees.

  2. Beat the butter, peanut butter and sugars until creamy. Add the eggs, vanilla and milk and cream together.

  3. Add in the flour, baking soda and salt and mix until combined.

  4. Shape the dough into balls and roll them in sugar. Put on a cookie sheet lined with parchment paper and using a fork, do cross hatches on top of each cookie.

  5. Bake for 10-11 minutes, take out and let cool for at least 5 minutes on the sheet before removing to a wire rack.
