Peanut Butter Banana Smoothie Bowls

The instant that I place my blender on the counter, my daughter grabs her apron. I love her growing excitement in the kitchen! We have so much fun even if things are a bit more messy and maybe take longer. She even helped me shoot photos of this smoothie after we made it! She always wants to hold the camera which I don’t recommend but I pretty much just give in and let her.

On a side not, I am currently reading Michelle Obama’s book, Becoming, and I am falling in love with it. So much inspiration from a career standpoint as an attorney and as a parent. One quote she has is: “Work with purpose. Parent with care.” This has nothing to do with this smoothie recipe other than I just felt the need to share it because her quotes are flooding my mind lately!!!

Ingredients

  • 2 large bananas, sliced and frozen

  • 2 ½ tablespoons natural peanut butter

  • 1 ½ cups unsweetened almond milk (or milk of choice)

  • 1 Tablespoon cocoa or cacao powder

  • Ice cubes

  • Optional add-ins: coffee, protein powder, fresh spinach

  • Optional toppings: coconut flakes, chia seeds, granola, sliced banana, drizzled peanut butter.

Directions:

  1. In a high-speed blender, combine the bananas, peanut butter, almond milk, cocoa, and ice cubes. Blend until smooth and no ice cubes remain.

  2. Pour immediately into two bowls, and top with the optional toppings.
