Banana Smash Cake for Baby

Well here we are. Entering 2022 and celebrating George’s first birthday with this banana smash cake.

I am a broken record with this, but for any first-time mamas out there reading this… The first few months are so hard and sleepless because everything is so new…but then it’s like you blink and the months come and go right before your very eyes.

One year ago we were welcoming our third baby into our family and now he is crawling around everywhere, eating everything in site and smiling and laughing all day long.

This past year has been A YEAR. In good and bad ways. Adding a third child has been a big change for our family and in my opinion, going from 2-3 has been the hardest transition of all. I know everyone is different, so some may not think so, but having three little ones around here has been a circus and at times very tough! But, we are finding our routine and things do get easier, as is life, with time you find your groove. Our groove happens to be to LOWER all expectations and all standards, stop reading things that stress you out about what you SHOULD be doing, and just love your littles and have fun. Stop worrying so much. Embrace imperfection. Embrace all the little things. Embrace all the small, special moments that make big memories.

NOW TO THIS BANANA SMASH CAKE!!!…

I decided to go with a banana smash cake this year. Because George LOVES bananas! And this is sweetened with maple syrup and applesauce. I then used my go-to whipped cream frosting because it’s light and fun, and relatively easy to whip up the cream into a frosting! It’s sweetened with maple syrup.

This is a super yummy and super fun banana smash cake that is perfect for a baby’s first birthday.

Banana Smash Cake for Baby

  • 1 cup all purpose flour

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon cinnamon

  • 1 ripe banana (medium-large size)

  • 1/3 cup unsweetened applesauce

  • 1/4 cup milk

  • 1/4 cup pure maple syrup

  • 1 egg

  • 1 teaspoon pure vanilla extract

Instructions:

  1. Preheat oven 350 degrees. Butter cake pans and dust with flour. You can use 2 four-inch or 2 six-inch cake pans. After I butter and flour the pans, I cut a circle out of parchment paper and place it at the bottom of each pan for easy cake removal.

  2. Whisk together the dry ingredients and set aside.

  3. In a medium to large bowl, whisk together the banana, applesauce, milk and maple syrup until well combined and very few banana pieces remain. Whisk in egg and vanilla

  4. Add in the flour mixture and mix with a spoon until combined.

  5. Pour batter in cake pans and bake for about 20 minutes until toothpick comes out clean. let cool and then run knife around cake and invert them out. I used two 6 inch cake pans. You could also do 4 inch cake pans for a thicker cake.

  6. Frost with whipped cream frosting. (recipe below)

Whipped Cream Frosting

  • 1 cup heavy whipping cream (coconut cream will also work)

  • 2 Tablespoons maple syrup

  • 1/2 teaspoon pure vanilla extract

Instructions:

  1. In a mixer with the whisk attachment, whip all of the ingredients on high for several minutes until it forms a whipped cream and stiff peaks.

  2. Store in fridge until ready to frost the cake.
