I can hardly believe I’m updating this post years later! This banana smash cake was the cake I made for George’s first birthday, and now he tells me he’s a big kid …who still loves helping me in the kitchen. :)

When George turned one, we were also very much adjusting to life as a family of five.

Going from two kids to three was our biggest transition yet. It’s been tough and I am not gunna sugar coat it (of course it’s so worth it, but that doesn’t cover up the fact that it’s really hard).

Kind of wild that this has become such a first birthday tradition, but I have to admit, it’s a pretty sweet memory to capture.

With George, he took a little taste of his banana smash cake, played around with it, and then we cut the rest and enjoyed it as a family. A smash cake is really just a fun way to celebrate your baby turning one (and yes, get those messy face photos!).

Banana Smash Cake RECIPE for Baby

Banana Cake

  • 1 cup all-purpose flour

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon cinnamon

  • 1 ripe banana (medium-large size)

  • 1/3 cup unsweetened applesauce

  • 1/4 cup milk

  • 1/4 cup pure maple syrup

  • 1 egg

  • 1 teaspoon pure vanilla extract

Instructions:

  1. Preheat oven 350 degrees.

  2. Butter cake pans and dust with flour. You can use 2 four-inch or 2 six-inch cake pans. After I butter and flour the pans, I cut a circle out of parchment paper and place it at the bottom of each pan for easy cake removal.

  3. Whisk together the dry ingredients and set aside.

  4. In a medium to large bowl, whisk together the banana, applesauce, milk and maple syrup until well combined and very few banana pieces remain. Whisk in egg and vanilla

  5. Add in the flour mixture and mix with a spoon until combined.

  6. Pour batter in cake pans and bake for about 20 minutes until toothpick comes out clean. let cool and then run knife around cake and invert them out. (I used two 6-inch cake pans. You could also do 4-inch cake pans for a thicker cake.)

  7. Frost with whipped cream frosting. (recipe below!)

Maple Syrup Whipped Cream Frosting

  • 1 cup heavy whipping cream (coconut cream will also work)

  • 2 Tablespoons maple syrup

  • 1/2 teaspoon pure vanilla extract

Instructions:

  1. In a mixer with the whisk attachment, whip all of the ingredients on high for several minutes until it forms a whipped cream and stiff peaks.

  2. Store in fridge until ready to frost the cake.

Can I freeze the banana smash cake?
Yes! Freeze the unfrosted cake layers tightly wrapped. When you’re ready to serve, thaw the cake layers, add the whipped cream frosting, and enjoy.
