Coconut Flour Pancakes {gluten-free, dairy-free}

Happy hump day! 

We are halfway through the week. One day closer to the weekend. And for me, one day closer to these pancakes...

It's becoming a tradition of sorts. On Sundays, it's a long run followed by coffee and brunch. And just about every Sunday, I've been making these pancakes. 

As much as I wish I did, I don't eat these leisurely pancakes every morning. Weekdays I workout, pack my breakfast and lunch, and head to work where I eat breakfast in my office. So glamorous, I know...  But, as dull-drum as my weekday breakfast routine may seem, it makes me look forward to weekend brunch even more! When time slows down just a bit.

I love these pancakes because they have no sugar, no butter, no dairy, no flour... but you know what? They don't need any of it. Yep, you heard that right!

I can indulge in these and still feel great. Enough said right there!

Coconut Flour Pancakes

Makes 8 pancakes

  • 4 large eggs

  • 1/4 cup coconut milk (or other non-dairy milk)

  • 3 tablespoons coconut oil, melted

  • 1 teaspoon pure vanilla extract

  • 1/4 cup + 2 tablespoons coconut flour (you can also sub almond flour for half)

  • 1/4 teaspoon baking powder

  • 1/4 teaspoon salt

  • Toppings: sliced bananas, blackberries/blueberries/raspberries/strawberries, natural peanut butter

Directions: 

  1. In a mixing bowl, whisk the eggs, milk and coconut oil together until smooth. Add in the vanilla extract.

  2. Using a wooden spoon, stir in the coconut flour, baking powder and salt and stir until completely blended. Add more flour if the batter appears to thin.

  3. Heat a pan to medium heat. Add coconut oil to the pan (I prefer coconut oil spray).

  4. Using an ice cream scoop, scoop the batter and place on the pan. Cook the pancake until the top begins to bubble and you are able to flip it. Flip over and cook 1-2 minutes on the other side. Repeat with all the batter. (Don't worry if you mess up, you'll get better as you go!)

  5. Warm berries over the stove or in the microwave. Warm the natural peanut butter as well so it can be drizzled over the pancakes.

  6. To serve: Top the pancakes with banana, berries and a drizzle of peanut butter.

  7. NOTE: You can also make these waffles!! Just add the batter to a small waffle iron. And increase the flour to 1/2 cup.

It's the little things in life that make you the happiest. And that can be as simple as pancakes on a Sunday morning.
