Dark Chocolate Almond Butter Cups

Hey Reese’s, could you move over a little bit?  

We have to make some room for these little guys…

Once you see how easy these are. You will need to make them. asap.

First, you drip the melted chocolate into little mini muffin tins. 

I know I know. It just seems sinful…

BUT, dark chocolate is packed with natural antioxidants and the all-natural almond butter is loaded with fiber and vitamins. 

So I think we can agree that this little candy is in line with a healthy lifestyle.

Of course, you can use either natural almond butter or natural peanut butter. Both are delish!

This idea is from the blog, Sprouted Kitchen, and I just had to make them and share.

Dark Chocolate Almond Butter Cups

  •  7 oz. dark chocolate (I use dark chocolate chips)
  • ½ cup natural almond butter (or natural peanut butter)
  • 2 Tbsp. honey
  • 1 Tbsp. powdered sugar
  • ½ tsp. vanilla extract
  • ¼ tsp. fine grain salt
  • sea salt flakes, for topping

Directions:

- Put the chocolate in a microwave safe bowl and microwave in 30 second intrevals, stirring after each 30 seconds.  Stop when the chocolate is just about melted, and then stir until melted and smooth.

- Set out the liners in a mini muffin tin. Spoon about a teaspoon of the chocolate into the bottom.  Tilt it around so the chocolate coats the side of the liner. I use a spoon to push the chocolate up on the edges of the liners.  

- In a bowl, mix the almond butter, honey, powdered sugar, vanilla and salt together until smooth to make the filling.  Scoop out about a small teaspoon of the almond butter filling and gently roll it into a ball between your palms. Press down the balls in the center of the chocolate in each muffin tin.

- Spoon more chocolate, about another tsp., on top of each almond butter ball to cover completely. smooth it over so it is all covered.

- Sprinkle a teensy pinch of flaked sea salt on each one and chill in the fridge until they are set. These cups can be kept in a covered container at room temperature or fridge.

      

This was perfect reason to finally buy some muffin liners.
