6-Ingredient Peanut Butter Cookies (and gluten-free!)

Want a sweet treat but also want VERY minimal ingredients?! This is it!

Whenever cookies sound good, but also I am tired (which is often with three young kids LOL)… this peanut butter cookie is a go-to. It’s flourless and also makes for a fun treat in the afternoon. Heck, we eat these all the time!

I love the wholesomeness of a peanut butter cookie. I find it comforting. And the taste of peanut butter in these cookies is MIND BLOWING. I mean… these are essentially peanut butter and sugar soooooo…. trust me these are good!!! They are just the right amount of crisp and also are gluten-free. I find myself grabbing one any time of the day for a sweet snack.

Here are the 6 ingredients you need!

  • Peanut butter (I use the Natural JIF brand)

  • Egg

  • White Sugar

  • Dark Brown Sugar

  • Vanilla Extract

  • Baking Soda

This is also a fun one to make with kids because it’s quick, so they keep their engagement the entire time. My daughter loves to roll the dough balls in the sugar and then we use a fork to make the cross hatch pattern. We put the cookie dough balls on 2 cookie sheets and it’s done! Baked, cooled, and there ya go. Yummy peanut butter cookies.

6-Ingredient Peanut Butter Cookies

  • 1 cup peanut butter

  • 1 egg

  • 1/2 cup white sugar (plus extra sugar for rolling)

  • 1/2 cup dark brown sugar

  • 1 tsp baking soda

  • 1/2 tsp vanilla extract

Directions:

  1. In a bowl with a spoon, or in a mixer, cream the peanut butter, egg, sugars, baking soda and vanilla until well combined!

  2. Pour some sugar on a plate for rolling the dough. Spoon out tablespoon-sized dough balls and roll in the sugar. Put on a cookie sheet. Use a fork to make a cross hatch pattern.

  3. Bake at 350 degrees for about 9-10 minutes. Take out and let cool for a few minutes on the cookie sheet before removing. Enjoy!
