3-Ingredient Peanut Butter Cookies (gluten-free)

I had a table at a recent event at Bowood Farms and a woman who walked by needed an easy gluten-free recipe to make with her grandkids over the holidays. I instantly thought of this cookie and wrote it down for her.

If you want a SUPER easy and SUPER yummy peanut butter cookie with just three ingredients, this is it.

I love adding the Hershey Kisses to it, for a chocolate touch. But, you can also just roll the dough in sugar and use the cross-hatch peanut butter cookie pattern for a more classic peanut butter cookie feel.

This will make about 12-14 cookies.

3 Ingredient Peanut Butter Cookies

  • 1 cup peanut butter

  • 1 cup white sugar (plus additional sugar for rolling in the dough balls)

  • 1 egg

  • Hershey Kisses (optional)

Instructions:

  1. In a bowl with the wooden spoon or in a mixer, combine the peanut butter, sugar and egg until fully combined.

  2. Make tablespoon size dough balls and roll into sugar and place on a cookie sheet lined with parchment paper.

  3. If you are making these with hershey kisses, after you roll into sugar and place on cookie sheet, bake at 350 degrees for about 8-9 minutes. Take out and press the Hershey Kisses into each dough ball and bake for 1-2 more minutes.

  4. If you are not using the chocolate, after rolling the dough balls in sugar, you can use a fork and make a cross-hatch pattern. Bake at 350 degrees for about 10 minutes.
