An Easy Cookie Recipe Made With Boxed Cake Mix

Today is all about EASY. And with three young kiddos, you all know how I love easy!

I bake a lot and a lot of the time it is with my kids. And don’t get me wrong, nothing beats a homemade cookie. It just hits different. That being said, there are times and days that just call for a short cut. And my favorite short cut with cookies is by using a box of cake mix. Boxed cake mix is essentially all of the dry ingredients rolled into one, so you don’t need very many steps outside pouring the box of cake mix into the bowl. And there is something irresistible about boxed funfetti cake mix. That is my favorite one to use for cookies. I personally just really loooove the flavor. You know the cake balls or cake batter flavored things? This tastes like that. Plus, this cookie is SUPER soft, again making it a crowd pleaser.

With the cake mix, you just need 3 other ingredients to make these cake mix cookies.

  • 1 box of cake mix (I love Funfetti)

  • Eggs

  • Pure Vanilla Extract

  • Flavorless Oil

And that’s it!

I love making this with kids because it’s very little measuring and steps, so they keep their interest. And since it’s all in one bowl, there are very few dishes involved for clean up! We mix this recipe up in one bowl with a wooden spoon.

After baking, you could even top these with frosting and sprinkles to make them extra fun! Use store bought frosting for an easy short-cut.

An Easy Cookie Recipe Made with Boxed Cake Mix Cookies

(Makes 18-24 cookies)

  • 1 box funfetti cake mix

  • 2 large eggs

  • 1/3 cup oil (flavorless)

  • 1 tsp vanilla extract

Directions: 

  1. Preheat oven to 350 degrees and line 2 baking sheets with parchment paper.

  2. In a large bowl, mix all of the ingredients until combined.

  3. With a cookie scoop, scoop balls of dough onto the baking sheets. Flatten the top of the balls slightly with your hands.

  4. Bake for about 10-11 minutes, or until starting to turn very very light golden brown (but don't overbake, you don't want them too golden!). Take out and let cool on the cookie sheets for 5 minutes then transfer to a wire rack to cool completely.

The fun part about these cookies is you can switch it up for the holiday. These are Valentine’s Day themed, and we grabbed a box of the Funfetti Cake Mix that was Valentine’s Day colors.
