Double Chocolate Banana Muffins

When two ripe bananas sat on my counter, I almost made a batch of regular banana muffins when I decided that day was the day we needed DOUBLE chocolate banana muffins. That was a great decision!!! 

This recipe is SO good, so if you want something a little bit EXTRA, this is your muffin.

Double Chocolate Banana Muffins 

  • 1/3 cup canola oil

  • 2 large ripe mashed bananas (about 1 cup)

  • 2 large eggs

  • 3/4 cup milk of choice 

  • 1/3 cup honey

  • 1/4 cup brown sugar

  • 2 teaspoons pure vanilla extract

  • 2 cups all purpose flour

  • 2/3 cup unsweetened cocoa powder

  • 1 1/2 teaspoons baking soda

  • 1 teaspoon baking powder

  • 1/2 tsp salt 

  • 1.5 cups chocolate chips 

Directions.

  1. Whisk all of the wet ingredients in a bowl until combined, with not many banana chunks remaining. 

  2. Whisk all of the dry ingredients in a separate bowl. 

  3. Slowly combine all of the ingredients into one bowl and stir in chocolate chips. 

  4. Pour into muffin tins sprayed with nonstick spray and bake at 325 degrees for about 23-25 minutes. Remove and cool and enjoy! Store in fridge.
