Pumpkin Seed Butter + Chocolate Chip Bites {gluten-free}

Happy Sunday!

I’m a lover of no-bake energy bites so here we are with another recipe for your own arsenal. This one can be adapted to whatever nut/seed butter you have or prefer. Dylan has an allergy to a majority of tree nuts, so these bites are nut free. I used my new favorite nut free brand, 88 Acres. These are with pumpkin seed butter!

I was so bummed when I learned Dylan could not eat our favorite nuts: cashews, pecans, pistachios and walnuts. How would she go on and not be able to enjoy all of the yummy foods that have those nuts? All the baked goods. And a lot of dairy-free cheeses, pesto, etc. That, and the fear that she would eat something with those nuts in it and have a reaction. Allergies are a scary thing in my opinion because we are not with our little ones all of the time! I know things could be a lot worse, so I hate to complain about this. But, at the same time, allergies are hard no matter the food.

I was SO excited when I found this brand, 88 Acres! Because it means we can still enjoy lots of butters and bars with no worries!!

Pumpkin Seed Butter + Chocolate Chip Bites

  • 3/4 cup pumpkin seed butter (or other nut/seed butter of choice)

  • 1/4 cup shredded unsweetened coconut

  • 1 cup rolled oats

  • 1 Tbsp. chia seeds

  • 2 Tbsp. pure maple syrup

  • pinch of salt

  • 1/2 tsp. pure vanilla extract

  • 1/4 tsp. ground cinnamon

  • 1/2 cup chocolate chips

Directions:

In a large bowl, mix the nut/seed butter and maple syrup until smooth. Add in the remaining ingredients and mix to combine. Roll into balls and chill in the refrigerator until firm. Enjoy! Makes about 15-16 balls.
