Apple-Ginger Smoothie {vegan}

Although fall has arrived, it still feels like summer here in the Midwest. 

This drink is a smash between fall and summer - with the apple and peach. Which is fitting for this month as the seasons are sort of blending together... in a wonderful way (aside from the constant sweating).

The past few weekends after morning runs and workouts, I've still craved something refreshing at breakfast. Enter this apple and peach drink. And we can't forget the zing from the ginger. It's a perfect, refreshing combo!

Don't skimp on the fiber and extra nutrients - be sure not to peel the fruit! Just take out the core and throw the whole thing in the blender. This goes for both the peach and the apple. I blend it up until it's a juice of sorts and frothy. 

Call this a juice or a smoothie. Either way it's a winner.

Apple-Ginger Smoothie {vegan}

(Makes 1 large serving or 2 small servings)

  • 1 apple, cored

  • 1 peach, pit removed

  • 1 1/4 cups cold coconut water

  • 1/4 teaspoon grated, fresh ginger root

  • Juice from 1/2 lemon (and its zest for added flavor!)

Directions: 

  1. In a high-power blender, place all of the ingredients and blend for 1-2 minutes until it is completely smooth and juice-like. If your blender is not as strong, just blend it longer until it is a juice.

  2. Pour into glasses and serve immediately.

I pour this into two small glasses and serve with breakfast, but you can pour it in a large glass and keep it all to yourself.
