Time. We live in a world where it always feels that there is never enough time. Time to workout, time to cook, time to grocery shop, time to read, time to just relax. Why do we feel so pressed for time?
Maybe it's because we don't use our time efficiently. We don't dedicate enough time to the things that mean the most to us. We don't put time aside to just be on our own, for ourselves. Or for our family. This year, let's all cherish our time. Stop rushing from one task to the next, as if it's a race and the more you do, the more worth you have. Spend time doing what you want to do, not what you think you should be doing.
When JORD Wood Watches asked me to feature their watches in a post (which also happen to be my all-time favorite watches!), I kept thinking about their notion of how a watch and moments in your life are so much more than just the ticking seconds going by.

Let's all savor these moments, okay? With this frigid winter weather hitting us hard over here in the Midwest, it's the perfect reason to slow down, pamper yourself and snuggle up at home in front of a fire. That's what I'll be doing!

They will give you some power to soak in all the day's pleasures, activities and keep you feeling alive. Prepping whole foods and taking the time to nourish my body keeps me happy throughout the day. Which is why I take the time to make homemade snacks and bites instead of buying packaged food at the store. I love these zesty little guys. Just blend up, roll up and there you go!
Grain-Free Lemon Energy Bites
- 1 cup of almonds (or cashews or a mix of both)
- 10 pitted Medjool dates
- 1/2 cup shredded unsweetened coconut (plus more for rolling)
- Juice from 1/2 lemon
- zest from 1 lemon
- 1/4 tsp. fine sea salt
- Pulse the almonds in a food processor until finely chopped. Add in the dates, coconut, lemon juice, and salt and pulse until beginning to stick together and well combined. Add in the lemon zest and pulse to incorporate.
- Use a spoon and scoop out tablespoon-sized balls and roll in your hands. Roll in additional coconut, using your hands to press the coconut into the ball. Place on a baking sheet and refrigerate until ready to serve.
- You can store these bites in the refrigerator for up to a week in an airtight container. Or freeze for 1 month.
- Makes about 20 bites.
